I can't change the setting anywhere, or find it even, that allows me to use dollars.

The currency for the ezprice datatype is set by the locale:

look in site.ini.append(/.php) in your siteaccess

[RegionalSettings]
Locale=eng-GB

While the above method is certainly preferred, if for some reason you wish to keep using the eng-GB locale setting, you can also update just the "Currency" information in the eng-GB locale by updating the "currency" section of /share/locale/eng-GB.ini as follows:

[Currency]
Symbol=$
Name=American Dollar
ShortName=USD
