I've noticed that the stock templates don't have a table-based layout. Our current site design uses tables for layout. Am I going to break something if I use a table-based layout?

Table based layout works just fine in Exponential. It's just a matter of what you like to use.

We've switched to div based layout in 3.3 because we think that it gives more flexibility in terms of re-using the templates for different designs. Most current Exponential sites uses table based layout or tables in combination with div based layout.

Thanks for the info.

I am aware of the issues with using tables for layout. Its a hard habit to break after 7 years of web design. Right now this project is on a fast track and I can't spend the time re-learning my skill set.
