I would like to hide the buttons for some of the behaviours in the Online Editor. For example when I am editing my custom class, it should not allow to insert objects.
I looked in 3 places
extension/ezdhtml/design/standard/stylesheets/ezdhtml/editor.css
extension/ezdhtml/design/standard/javascripts/ezdhtml/ezeditor.js
extension/ezdhtml/design/standard/templates/content/datatype/edit/ezxmltext_ezdhtml.tpl

and cannot find a configuration like that without hacking the JavaScript. And then if I need to upgrade it my hacks are broken. Any cool tips?

Have no idea about OE, but in SJSD, it is as easy as overwrite a template file (in fact you just need to edit an array in a js file, and save that file in your own design dir, so it won't be overwrited next time you update SJSD)
