I have an existing eZ 3.6 site running, but not in virtual host mode. Is it even an option for me to change it over to virtual host mode now that I have it all up and running OR does that have to be done in the initial site set up?

1. Setup correct VH config:

2. Clear all cache

If you want to switch from URI siteaccess to host, you will have to change settings in site.ini and add subdomain names (e.g admin.example.com) in your DNS.
