However, in a test site I've created, removing the attribute and adding another one with the same name removes every single attribute in every object. Is there any way I could make the transition?

Try this.

There is not any straightforward way to do it. Depending on how many objects, you could leave both attributes in place, and copy and paste from one to the other, but this requires editing each object.
